Chicken & Crispy Bacon Potato Salad

Ingredients

2 breast Chicken, poached, finely sliced
½ cup Mayonnaise
500 gms Potatoes, Nicola, boiled in there skins, cubed
10 rashers Bacon, cooked on a tray, finely sliced
3 heads Garlic, roasted
½ red onion, finely diced
1 bunch parsley, chopped
½ bunch chives, chopped
1 bunch dill
1 lemon, juiced
1 tbsp. olive oil
½ cup grain mustard
½ clove garlic, grated
1 tbsp. apple cider vinegar
1 tsp. horse radish

Method

In a small mixing bowl, combine mayonnaise, roasted garlic, fresh grated garlic, apple cider vinegar, grain mustard, onion, lemon juice, olive oil, horseradish.

In another bowl, gently mix together bacon, chives, potatoes, chicken, dill and parsley.

Pour over dressing and toss to combine.
