Broccoli and Feta Fritters

Serves 4
Time 20 minutes

Ingredients

1 large broccoli head, finely chopped
4 eggs, beaten
1 small bunch of parsley, finely chopped
1 cup rice flour
2 tbsp hemp flour
¾ cup feta, crumbled
½ cup walnuts, chopped
Salt and pepper
3-4 tbsp extra virgin olive oil

 

To Serve:
1 lemon, wedges
Extra virgin olive oil
Salt and pepper

Method

Steam broccoli for five minutes then drain until dry. Discard the large stem and finely chop the florets so it has a rice-like consistency.

In a large bowl, beat the eggs. Add the parsley, rice flour, hemp flour, feta, walnuts, broccoli and season generously with salt and pepper. Stir to combine.

In a large frying pan heat extra virgin olive oil until hot and place heaped tablespoonfuls of the fritter mixture into the pan.

Fry for 2-3 minutes on each side or until they begin to brown.

Drizzle with extra virgin olive oil and a sprinkle of salt and pepper and serve with lemon wedges.
