Breakfast Super Bars

Serves 4-6
Time 35 minutes

Ingredients

1 ½ cups instant oats
1 cup quinoa, cooked
1 tsp baking powder
⅓ cup coconut sugar
¼ cup hemp seeds
2 bananas
2 eggs, lightly beaten
2 tbsp natural peanut butter
Juice of ½ lemon
1 tsp vanilla extract
¼ cup goji berries
1 punnet fresh blueberries

Method

Preheat the oven to 180°C.

Line a baking tray with baking paper.

 

In a large mixing bowl whisk together the oats, quinoa, sugar, baking powder, and hemp seeds.

 

In a separate bowl, mash the bananas and mix in the peanut butter, eggs, lemon juice and vanilla.

 

Pour the wet ingredients over the dry ingredients and mix well. Fold in the goji berries and blueberries.

 

Spread the mixture on the lined baking tray and bake for 25 – 30 minutes until golden brown.  

 

Once cooled, slice into bars to serve.
