Breakfast Couscous

Ingredients

1 cup couscous

1 ¼ cup fresh apple juice

3 tbsp honey

¼ cup almonds

¼ cup goji berries

½ cup blackberries

4 peaches, deseeded, cut into quarters

sheep’s milk yoghurt

Method

Heat apple juice and 2 tbsp. of honey in a saucepan and bring to the boil with half of the goji berries. Place couscous into a bowl and pour juice over the top. Cover with cling wrap and set aside for 5 minutes. Remove cling wrap and use a fork to fluff couscous.Once couscous is cool, add almonds, goji berries, apricots, grapes and mix together.


Serve into 2 bowls and a good amount of yoghurt and a little drizzle of honey to finish.
