Breakfast Bagel Burger with Maple Aioli

Ingredients

500g premium beef mince
½ red onion, finely diced
1 tbsp thyme, finely chopped
Salt and pepper, to taste
4 bagels, sliced in half and buttered
4 rashers middle bacon, halved
1 cup smoked cheddar cheese, grated
2 eggs, fried
2 cups rocket
2 tomatoes, thinly sliced

2 tbsp sriracha hot chilli sauce
¼ cup whole egg mayonnaise
1 tbsp maple syrup

Method

Using your hands, mix together the beef mince with the onion, thyme and salt and pepper until well combined. Form the mix into four evenly sized burger patties and place into a large nonstick frypan over medium-high heat.

Add the bacon to the same pan so that the fat renders down and helps to fry the burger patties. Cook the patties for about 5 minutes on one side then flip over the cook the other. Sprinkle some cheese over each burger patty, then place the bacon on top, and fry until it has melted.

In a small bowl, whisk together the mayonnaise, chilli sauce and maple syrup until combined.

Toast the bagels on both sides in a hot griddle pan and set aside.

To assemble, place a couple of slices of tomato on one half of the bagel, followed by some rocket, then place the burger with the melted cheese and bacon on top. Top with a fried egg then drizzle some of aioli over everything. Top with the other half of the toasted bagel and secure everything with a toothpick or skewer.
