Bread and Berry Pudding

Serves 6-8
Time 20 minutes plus overnight refrigeration

Ingredients

175g caster sugar
½ cup water
250g strawberries, halved
250g blueberries
250g blackberries
250g cherries
250g raspberries
7 slices day old bread
coulis to serve
dollop cream to serve
mint

Method

Boil sugar in water for a minute. Add berries except for the strawberries. Cook for a few minutes, keeping the fruit intact.

Line the mould with cling film and then bread, overlapping the slices. Fold fruit with strawberry and load into mould.

Press overnight with a plate and a light weight, until set.

Serve with fresh berries, a few leaves of mint and a dollop of cream.
