Blueberry Galette

Serves 8-10

Ingredients

Dough/Crust
200g unsalted butter, cold and cut into cubes
2½ cups plain flour
1 tbsp sugar
1 tsp salt
½ cup buttermilk, cold

Filling
5 punnets blueberries
½ cup brown sugar
2 tbsp cornflour
Zest of 1 lemon

1 egg, for egg wash
Brown sugar, for sprinkling

Method

Preheat oven to 185°C.

To make the dough, combine all of the ingredients into the Magimix cook expert and press the bake function, pastry/dough button for 1 minute 30 seconds.

On a clean benchtop, with a light covering of flour lay the dough in a ball and roll the pastry with a rolling pin. This needs to be done swiftly before the pastry becomes too warm and starts melting. Once it is evenly flattened, place the pastry in a lined dish with a little overhanging the edge of the dish.

Make filling by gently mixing together all the filling ingredients and place in the centre of the pastry.  Fold the edges of the pastry up over the top of the mixture leaving a 10cm gap in the middle. Brush egg wash on the pastry and sprinkle brown sugar on top of it.

Bake in the oven at 185°C for 45mins to 1 hour until golden brown.
