Black Pepper Tofu Steak

Serves 2
Time 15 minutes (+marinating time)

Ingredients

½ can cannellini beans, drained and rinsed
¼ brown onion, finely chopped
1 garlic clove, finely chopped
1 tbsp extra virgin olive oil
1 tbsp honey
1 tbsp organic soy sauce
1 tsp dried thyme
2 tsp cracked black pepper
1 tbsp extra virgin olive oil
1 200g block of firm tofu, cut in half
1 cup cooked peas, to serve

Method

To make the mash, in a small pan over medium heat, cook the onion and garlic in 1 tbsp extra virgin olive oil for a few minutes until softened. Add the cannellini beans and cook for a further 2-3 minutes. Remove from the heat and mash everything together with the back of a fork.

In a bowl whisk together honey, soy sauce, thyme and black pepper. Add the tofu, making sure all is covered and place in the fridge to marinate for at least an hour.

Place tofu steak into griddle pan on a low-medium heat and sauté for 5-10 minutes on each side until both sides are golden.

Serve with cannellini bean mash and peas.
